The Real Food of Italy

The passion that Gianfranco and Daria have for Italian food and wine is unmatched.  This weekend you will feel as though you have been transported to both Southern Italy(where Gianfranco is from) to Northern Italy (Daria’s home).  You will learn the intricacies of how an Italian menu comes together, with essential wine pairing instruction and gastronomical insights. This class will address the inexperienced novice and the more practiced home-chef alike.

Interesting background information, geographic, historic and cultural facts will be shared along with the recipes and food, in a relaxed and fun ambiance, in true Italian style!

Together, Daria and Gianfranco offer the ultimate “truly Italian” experience around the dining table, as only someone who was born and raised in that country can do.

 

Friday light dinner

Presentation: the structure of the Italian meal, the importance of regional ingredients

and introduction to the Mediterranean Diet (Gianfranco)

Presentation : the principles of Italian wine-pairing (Daria)

Hors d’oeuvres demonstration (served with Prosecco):

Gianfranco Mosca

When Gianfranco retired from a career in international banking, he pursued a lifelong passion for food and the authentic family recipes and cooking traditions from his Italian family. First, in order to refine his cooking technique, he attended a professional cooking school in Rome. After moving to Victoria, he set out to be a passionate advocate for authentic Italian cuisine and traditional recipes. Italian cuisine is, first and foremost, a showcase of fresh, regional ingredients which, blended according to  traditional recipes, aided by the correct techniques, culminate in delicious and healthy dishes we can all learn to produce. Gianfranco was Guest chef at “The London Chef” cooking school of Victoria for a few years, where he was both conducting Italian cooking classes and hosted weekly Italian “Chef’s Plate” events. During those years, he also organized private cooking classes for small groups, and was invited to many gatherings and events as private chef. More recently, Gianfranco brought his passion for Italian cuisine all the way to the Caribbean, where he and his wife launched and ran a successful fine-dining Italian restaurant in a challenging setting. His dishes won the heart and taste-buds of locals and international tourists alike, and the restaurant is now a successful testimony of authentic Italian cuisine. Gianfranco has now moved back to Victoria, looking for new challenges and opportunities to share his passion for “la cucina italiana” with more and more aspiring “cuochi”. Gianfranco is member of the Federazione Italiana Cuochi Canada as well as the Canadian Culinary Federation.

Daria Dosselli

Daria, Gianfranco’s wife, also started a career in banking, then worked for many years as an international educator, and finally transitioned to  hospitality when the family moved back to Rome after many years abroad. Daria opened a successful high-end bed and breakfast in Rome and, to complement Gianfranco’s passion for food, successfully pursued all three levels of the sommelier qualification with The Association of Italian Sommeliers of Rome. It was only natural, once the family decided to relocate to Victoria, to add a Hospitality College Diploma to her credentials, in order to better understand the local hospitality industry, where she worked for many years for the top hotels in town. Looking for new challenges, she followed Gianfranco to Central America, where she helped in the setting-up and running of a fine-dining Italian restaurant. Specifically, she was dedicated to creating menus and wine lists and training of all front-of-the-house staff. Her focus was, and still is, to familiarize Guests with less known Italian labels and illustrate the importance of correct wine and food pairing to maximize the dining experience. Daria has returned to Victoria and accompanies Gianfranco during his classes and private dining events where she loves to share her knowledge of Italian wines and wine-pairing techniques.
